Here is a great recipe for Rice Tomato Casserole:
2 tbsp. butter or oil 1 ½ top. salt
½ onion 1/8 top. paprika
1 c. brown rice ½ c. grated Cheddar cheese
1 c. tomato juice
2¼ c. chicken
consommé or beef bouillon.
Melt fat in frying pan; add chopped onion, cook 1 minute, stirring constantly. Add rice and brown. Add tomato juice, consommé and seasonings. Cook covered until rice is tender, about 50 minutes. Stir in grated cheese. Serves 4.
